Yemen sweet vermicelli

Recipe by Surtag Hack

  • 3 cups of water
  • 2 cups of vermicelli
  • 3/4 cups of white sugar – I used only 1/2 to reduce sugar intake
  • A little oil
  • Seeds nuts and spices

Start by toasting some chopped nuts and seeds, almonds, cardamom, whatever you like then put them to one side.

Next, in a pan brown the vermicelli until it is golden brown – watch out so it does not burn. Add just enough water to cover the vermicelli and reduce the heat. Wait for the water to be almost all gone and test the tenderness of the vermicelli to make sure it is done. Add the sugar and stir well, cook for more 5 minutes then turn off the heat. Stir in the toasted seeds and nuts, and sprinkle on coconut flakes. Enjoy.
